Ensaimadas
The ensaimada is one of the most popular pastries in Spain. It originates from the island of Mallorca, where only a few commissioned shops remain to bake the original recipe. Almost like a soft, white pastry, with a thin flaky crust, it is shaped into a flat coil and dusted with powdered sugar. The ensaimada comes in various sizes, with small ones being served for breakfast with hot chocolate or coffee, and very large, elaborately-shaped ones for dessert. They come plain, or filled with a sweet conserve called “Cabello de Angel” (Angel’s Hair), or topped with “Sobrasada” (Mallorcan sausage) or whipped cream. Today, the ensaimada has several versions and can be found not just in Spain, but in other Spanish-influenced countries as well.
Our ensaimada is a product of three generations of experimenting and trying different ingredients and at the same time, keeping the tradition. Our recipe uses European style butter and lots of egg yolks. After 15 hours, the result is a very soft, light and golden bread. So soft and light, it will dance with your taste buds.
We offer our ensaimadas in two sizes (regular and small) and come either Classic or filled. The regular size is perfect for breakfast or a snack. The small ones are the rave of your tea party, bridal shower or breakfast meeting. Either size makes a wonderful, unique gift. Fillings are Mahon cheese, dark chocolate and cinnamon. Check our site regularly as we introduce more variety, such as fruits and nuts, to our line.

The incredible beauty of this Spanish region inspired a grandaunt to collect priceless recipes and brought them to the family kitchen. One of them was the Almendrados (Macaroons).
